From the rolling highlands of Huila, Colombia, an expressive and playful coffee comes to life at Finca Las Palmas. Grown by Brayan Alvear at 1750 meters above sea level, this lot reflects both the vibrant character of the region and a thoughtful approach to processing. When it arrived on our cupping table, its unmistakable profile made an immediate impression, earning its place in our lineup without hesitation.
Composed of Caturra and Colombia varietals, this coffee is brought to life through a honey process paired with a watermelon co-fermentation. Brayan carefully manages each stage of fermentation to highlight the fruit’s natural sweetness while preserving clarity and structure in the cup. The result is a profile that feels both inventive and precise, where playful aromatics meet a clean, composed finish.
In the cup, it opens with bright notes of watermelon candy, reminiscent of Watermelon Airheads, followed by the soft sweetness of white cherry popsicle. As it cools, a delicate white tea character emerges, adding a gentle floral lift and a refined, lingering finish. Juicy, vibrant, and refreshingly unique, this coffee is a standout expression of Huila’s evolving approach to flavor and process.

This blend of Caturra and Colombia varieties begins with a 48-hour pre-fermentation in plastic bags under anaerobic conditions, allowing complex flavors to form. After depulping, the beans, still in mucilage, are co-fermented with yeast & watermelon flavors for five days which imparts a refreshing sweetness. The beans are then pre-dried on sun-exposed patios, followed by mechanical drying in static silos. A 30-day stabilization period helps the flavors fully develop, delivering a balanced and distinctive profile. – Forest
